Skipjack Oysters harvested aboard the 'Ada Fears' are harvested from grounds worked exclusively by Skipjacks. These grounds in the mid-Chesapeake Bay provide the optimal location for oyster growth and a mildly salty flavor profile (15-20 ppt salinity). Our oysters are culled to the highest standards to provide you with a consistent product to meet the needs of any chef. Below you will find the different grades of oysters that we available.
Raw Bar - This is the smallest grade oyster we have available, they are ideal for serving raw on the half shell. Enjoy these oysters naked or with a pinch of fresh horseradish and a drop of lemon juice.
Grills/Selects - This is our larger grade oyster, these oysters are plump and full of select meats. Many chefs are shucking these oysters and using the meats for 'single fry' or in stews and stuffings. Another popular use for these Chesapeake giants is Cajun style grilling.
